SEO stands for search engine optimisation. It involves a range of best practices to ensure that when users Google search terms that are related to your business you appear either in AI overviews or in Google's page 1 as many times as possible.

If you are ranking at the top of page 1 on Google for a given term, and users are landing on the correct URL on your website, running ads for these terms might not be an optimal use of your advertising budget. Similarly, running ads for a given term drives traffic to a URL, and when users have a positive experience and convert after landing on that page, it's a good signal for Google that the page and the overall user journey is high quality.
